I love to bake, as you know, but something about baking whilst it rains makes me feel like I am doing something useful with my time. Having two children, young children, stuck at home whilst it is raining fairly solidly for many days can be a hard task though. So my solution on this day was to bake some muffins.<br />

We also had visitors coming for breakfast...I say breakfast not brunch because most people with little ones know that they wake up at the crack of dawn. So, I thought some yummy muffins would go down well for breakfast. My favourite muffins are the Bourke street bakery dark chocolate and raspberry muffins, and I love that they are simple, yummy and have a little more sophisticated taste, due to the two main components, chocolate and raspberries.<br />

</div><div style="text-align: left;">The recipe is fairly basic and makes 12 large muffins, though I like to make smaller ones. I do like to make mine in little muffin cases and I only bake them for 15 minutes, but do check your oven and keep an eye on them.</div></div><br />

<strong><span style="color: #800400;"> Dark Chocolate and Raspberry Muffins from Bourke Street Bakery </span></strong><br />
Makes 12<br />
• 400g (2 2/3 cups) plain flour<br />
• 2 teaspoons baking powder<br />
• 300g caster sugar<br />
• 310g unsalted butter<br />
• 480ml buttermilk (I make my own buttermilk by adding 1 tsp of white vinegar per cup of milk)<br />
• 1 teaspoon vanilla extract<br />
• 3 eggs<br />
• 225g dark chocolate, roughly chopped<br />
• 225g raspberries, fresh or frozen<br />
• 55g raw sugar<br />
• Icing sugar, for dusting<br />

1. Preheat the oven to 190°C (375°F). Lightly grease a 12-hole muffin tin and line with paper cases.<br />
2. Sift the flour and baking paper into a bowl and add the sugar, mixing well to combine.<br />
3. Melt the butter in a saucepan over low heat, then remove from the heat and stir in the buttermilk. Using a whisk stir in the eggs to combine. Pour over the dry ingredients and whisk to combine. Use a large spoon to gently fold through the chocolate and raspberries. Don't overmix.<br />
4. Spoon the mixture into the prepared muffin tins. Sprinkle the tops with raw sugar. Reduce the oven temperature to 180°C (350°F) and bake for 20-25 minutes. For smaller ones, cook for around 10 -15 minutes. It may be necessary to drop the temperature about 10 minutes before the end of baking time if the muffins are starting to brown on top.<br />
5. To test if the muffins are done, push the top gently to feel that it is firm. Remove from the oven and allow to cool in the tins for 10 minutes before eating. Dust with icing sugar to serve.<br />

This is a good recipe to make with kids as it is fairly simple. They are moist and a little sweet, but not too sweet. Oh and as you have probably noticed I always forget to dust with icing sugar. They also freeze really well and are a great 'rush' morning breakfast. The little people in my life are not crazy about them, but I am yet to find a muffin recipe that they do like. Me on the other hand, I love them. <br />

Whilst I am not a coeliac I have suffered from gluten intolerance and so tried to avoid it in my diet for a few years. Recently, a friend of mine found out she was gluten intolerant and so when my hubby was going to their place I offered to bake some gluten free goods.<br />

I also purchased a bag of quinoa flour, with the expectation of cooking something from this beautiful book. I love this book..it is beautiful to look at, and inspiring as she has
beautiful photos of beautiful food and what's best is that she has
pastry recipes. Something most gluten free books don't have. <br />

For my first time I decided to go with a simple recipe, something I know most people love - chocolate, and make the Cocoa Sponge Cakes.I am sharing it below for you (although you can find it on a few places on the net). I did change the recipe slightly and I used cupcake moulds as I wanted smaller versions of these.<br />

The Quinoa flour is an interesting touch, it smells very nutty and I love that she uses alternative flours, and there is explanations in the book as well. <br />

1/2 cup vegetable oil<br />
1 cup coffee, chilled<br />
2 tsps vanilla extract (gluten free)<br />

125g dairy free margarine (as my friend has no issue with dairy I used stock standard margarine)<br />
1 1/4 cups icing sugar (gluten free)<br />
1/2 tbs cocoa powder (gluten free)<br />

<li>Preheat the oven to 190°C. Line two 12 hole cupcake tins with paper cases</li>
<li>Mix the flour, cocoa, baking powder and sugar in a large bowl</li>
<li>Combine the oil, coffee and vanilla in a separate bowl, then add to
the dry ingredients and stir well. Add the vinegar and quickly stir to
combine. Pour immediately into the paper cases</li>
<li>Bake for 25-30 minutes, or until a skewer inserted into middle comes
out clean. Cool in the tin and turn out onto a wire rack for icing</li>
<li>To make the icing, beat the margarine and sugar in a small bowl with
beater until well combined. Add the cocoa powder and beat until well
combined and the icing is smooth and thick. Using a palette knife (or
metal spatula), spread the icing generously over the cakes</li>

I think my oven was a little too hot as my cupcakes cracked, but all in all they tasted, fudgy, chocolatey (if that is a word) and went down a treat with everyone, not just the gluten free gal.<br />

Life is so hectic these days that when Christmas came around I couldn't wait to just lie down and stop for a minute.<br />

Now I have 2 go-to chocolate cakes that I love but I thought since I am on holidays I would take some time to try one of the other books in my library. <i><a href="https://www.miette.com/mailorder/books/miette-book.html" target="_blank" title="Miette">Miette</a></i>. I have wanted to bake something from this book since I got it. I love Miette. Now you probably think that is crazy coming from an aussie, but I did go to the store many years ago in the Ferry building in San Fran. My eyes lit up when I saw the store, the pretty delicacies, the chocolate, oh the chocolate (okay watching the weight does not factor in here).<br />

Well don' recall seeing the <a href="http://www.womanandhome.com/recipes/531276/miette-tomboy-cake" target="_blank" title="Tomboy">tomboy</a> cake when I was there but It has been high on my list of 'want to make'. It's the one on the front cover. Unfortunately, it had pink icing....so I thought I would make it a mint green or sky blue, but, noooooo said my two little people. We want pink! So pink it was too!<br />
<br />
The chocolate cake behind this is amazing. I could eat it on it's own. Everyone loved trying the little cupcakes I made with the extra batter. The cake is rich, moist and just smells heavenly. I almost considered putting a simple fudge on top but decided to make the meringue buttercream listed in the recipe.<br />

I have to say I am not a fan of meringue buttercreams. I know...blasphemy! I just find them too butter rich. So whilst this cake combination didn't rank that highly for me, I am sure it did and would for many others. And I would still devour this chocolate cake anytime.<br />

Well now that Christmas is over I am not baking so much. I am trying like most people to curb my sweet tooth, which can be very difficult when you write a 'Sweets' blog. So, on that note I will tell you that I am going to make some changes around here but I won't go into it right now. </div>

I did a lot of baking during the holiday period and one thing I have found that makes it all worthwhile is a good recipe. I would not bake anywhere near as much without good recipes to fall back on. And this one of my favourite cookie recipes.You see, they are soft, but firm, sweet and creamy (okay I know that sounds weird but that is how I think of them). </div>

The recipe for these yummy cookies is available in many places and is called the NFSC - the no fail sugar cookie recipe...it fits them perfectly. One great thing is that this dough will hold it's shape well (with a bit of refrigeration) and the dough won't puff up in the oven - a no-no for good cookie decorators. </div>

6 cups plain flour<br />

230 grams butter<br />

2 tsp. vanilla extract or desired flavoring (I have used various extracts but lemon is my favourite)<br />
1 tsp. salt</div>

Preheat oven to 180oC (160oC for a fan-forced).</div>

Cream butter and sugar until light and fluffy. Add eggs and vanilla. Mix well. </div>

Mix dry ingredients and add a little at a time to butter mixture. Mix until flour is completely incorporated and the dough comes together.<br />
Chill for 1 to 2 hours (or see Hint below)</div>

Roll to desired thickness and cut into desired shapes. </div>

Place baking paper on your baking sheets and place shapes on baking sheets. </div>

I tend to put my shapes back into the fridge at this point because the dough can get a bit warm when you cut shapes with it.</div>

Bake for 8 to 10 minutes or until just beginning to turn brown around the edges. This recipe can make up to 5-dozen 3” cookies.</div>

HINT: Rolling Out Dough Without the Mess -- Rather than wait for your cookie dough to chill, take the freshly made dough and place a glob between two sheets of parchment paper. Roll it out to the desired thickness then place the dough and paper on a cookie sheet and pop it into the refrigerator. Continue rolling out your dough between sheets of paper until you have used it all. By the time you are finished, the first batch will be completely chilled and ready to cut. Re-roll leftover and cut and bake!<br />

I have a bit of a fascination for cookies cutters and I bought these cute cutters from ebay. I think they are used in bento boxes or some thing like that but they make great cookie cutters and the kiddies can use them too. I made these cookies for my daughters playdate and I think my girls ate most of them. </div>

Not too long ago I made a bithday cake for the daughter of a friend. Chocolate mud cake, with chocolate ganache and a chocolate lace border with ..what do you think?...yes, chocolate curls on top.<br />

The smell alone was amazing and it weighed a tonne! <br />

But, what I found out was that the birthday girl was just notified that she was gluten intolerant. She had just found out. So, I wanted to make a small gluten free cake as well and I found a lovely recipe on taste.com.au.<br />
<br />
There are some pretty good recipes around for gluten free options these days, thankfully.<br />
<br />
So, i know I am not the only one busy this week so I will keep this a short post and say Merry christmas and a happy new year everyone.<br />

So, Meaghan has this great posting and I immediately fell in love with the cookies. I couldn't help myself and so my search began for jars....Oh I could go on, but needless to say <a href="http://www.petersofkensington.com.au/">Peters of Kensington</a> saved my life...Ohh I loooooove that store, so many things I want to buy...but yes I am going on again. So yes,I found jars, and pretty sprinkles and made dough....lots if it! and made cookies. Lots of them!<br />

I will share a few tips that I rely on this time of year to get through a large baking batch: <br />
1. Firstly, pick a dough you like to use and stick with it. The one I use lets me change flavours simply enough. <br />
2. Make the dough, roll into a log, and put it in the fridge. When it is firm enough I cut small amounts and cut my shapes. I then place those shapes directly onto baking paper lined trays and freeze (collect all the biscuits together when frozen and bag them) and place in freezer again.<br />
3. This way I can bake them all together. So just take them out of the freezer when you are ready to bake and add a little extra cooking time (a minute or two). Cool, cool, cool.<br />
4. Make all your batches of icing when you are ready to decorate and store in air-tight containers. I also used store-bought royal icing powder to decorate these cookies. I bought the Queens brand royal icing, and find it very good to work with, and that way I don't have to worry about raw egg-whites in my icing. <br />

I have a great book I love to bake from called <a href="http://books.google.com.au/books/about/Sky_High.html?id=wl58_L_h9r4C" target="_blank">Sky High: Irresistable triple-layer cakes</a> by Alisa Huntsman. There are many blogs out there that test the recipes in this book so I am not going to go on about it in great detail except to say that if you love to bake, and love layered cake combinations then this is a book for you. I love it and have made quite a few recipes from this book already and none have failed or even tasted mediocre - they all taste fab!<br />

So getting back to the cake and coffee combination. I have a great friend who has a birthday around the same tome as my girls, and I know she loves my cooking and baking so I always like to make her a cake for her birthdays. Well anyone who likes the 'tiramisu' taste would love this cake too. This is a cappuccino chiffon cake, so it is light, airy and smells heavenly. It is then soaked in a rum and sweet coffee syrup and then smothered in vanilla cream. <br />

I loved making this cake the first time so when I was asked to make it a second time I made a small one for my little gang and meto try, and it was worth it.<br />

I really wanted her to choose a cake design that she would love and enjoy decorating. As you can imagine she shows an interest so I really wanted her to enjoy and feel proud of her work too.<br />

So after a few ideas being thrown around she choose a necklace and earrings cake from the latest womens weekly <a href="http://www.bookdepository.com/More-Kids-Cakes-Australian-Womens-Weekly/9781742450544" target="_blank">more kids cakes</a> book. We adapted it a little design-wise and we chose a rainbow cake design based on the <a href="http://www.google.com.au/search?q=not+quite+nigella+rainbow+cake&ie=UTF-8&oe=UTF-8&hl=en&client=safari" target="_blank">not quite nigella</a> blog and had lots of fun making the necklace and covering cupcakes. There are some really nice ideas in the womens weekly book and lots for the kids to do or for you to try out.<br />

It's funny how birthdays of your own children always come around so quick and take you by surprise. It doesn't matter that I had been thinking and prepping this birthday for a month or two before, it still crept up on me.</div>

Now fortunately/unfortunately...depending on how you want to look at it, I have two birthdays to celebrate - 3 days apart..yes that is right, you heard me. And yes how lucky are we...both girls. Because the birthdays are so close together we decided to celebrate them with one party. But there was also the 'school' cakes too. </div>

We decided to use a party venue this year and I am so glad we did! We chose <a href="http://www.facebook.com/carnivalpartiesworkshops" target="_blank">Carnival Parties</a> at Bulimba. What a fantastic place it is. I cannot recommend it enough. The children were entertained from the moment we stepped in and the place was decorated so beautifully. And the best thing of all..I got to relax and concentrate on the parts I love to do for parties, the cake and the goody bags (although they can help you out in that area too).</div>

So for the cake we went with a castle theme which I also used on the invitations with two little girls, one in purple and one in pink, so I carried that theme through on the cake as well. </div>

The cake was a chocolate cake with a beautiful raspberry buttercream. I used real raspberries to make the puree for the buttercream and I love the tartness that comes through as it helps balance the sweetness of the buttercream.</div>

The cake also had a banana cake tier with maple buttercream..yumm! The top tier of the cake and the towers and turrets are fake...I thought we had too much cake already.</div>

I took the idea for this cake from a Debbie Brown book called Baby Cakes. I love this book, the designs are beautiful and I wanted to make the castle cake the first moment I saw it. </div>

I love them. I love being a part of them and always think its is very special of someone to ask me to be involved in their wedding, no matter what the request is. <br />

So I was asked if I would make a wedding cake for a friends son who was having a second wedding in Oz. The cake and colour scheme was chosen by the couple who had seen another cake they loved the look of, with a few minor modifications by me.<br />

Anyway, I hope they loved it as much as I loved being able to make it for them.<br />

Anyway, I made this cake for a friends little boys birthday and the children in her mothers groups. I loved that she was providing a cake for the mums group babies. I think mums groups are a very special thing and I still love to hear from the ladies that I met through my mums group. So this isn't the most exciting cake on the outside, but on the inside....it is a rainbow cake. You have seen one of these before I am sure and they never fail to impress. It is a white cake recipe coloured in the 7 rainbow colours and iced in a white buttercream. I added a bit of colour in the birthday message.<br />

My lovely friend Emma and her fiance Tegh are now married. It was a beautiful wedding held on the gardens of Bretts Wharf in Brisbane. We were very lucky to be invited as it was a small and intimate wedding.<br />

Emma and her bridal party looked beautiful and Tegh was very handsome. I really enjoyed the speeches as they were very personal and humorous. Teghs' sisters were MC's for the night and did a marvellous job. So thank you to you both for letting us be a part of your special day.<br />

And I was very lucky to be asked to make the cake, cookies and figures for their special day.<br />

The cookies were a lemon shortbread and embossed in roses. The bridal theme colours were baby pink, avocado green and black so I tried to incorporate those colours into the cake and cookies.<br />

Their cake was a three tier white chocolate mud cake with white chocolate ganache. There was a quilted tier with silver cachous and a tier with white swiss dots. The top tier was left plain. A large black bow and pearl and diamond brooch was attached to each tier with a pale pink, avocado green and black striped ribbon. </div>

That is where I have been lurking..but I am not ready to show you that yet. In the midst of all the decorating I have been doing I was thinking about my own wedding and the cake we had. No, I didn't make my own and I think any bride who does is very brave and very organised. We had lots of family travel to us for our wedding so even if I could have, I don't think I would have had the sanity to do it. So getting back to it. Our cake...was very small - only two tiers and was made by the wonderfully talented JudyC in Brisbane. It was a fruit cake (see I told you there was tradition) and there was some orchids to match my bouquet (elegant).<br />

Well this was a' what am I doing moment'. I decided for my older daughters birthday to make cupcakes for her whole daycare class. <br />Well she instantly fell in love with her cupcake princess' and I said' sure darling - I will make 2 dozen of those for you'. I love making figures normally and if I didn't have to make multiples of these I would probably be more excited about it. And, this would have been fine without the other two cakes I had to do that week....but by the time I got to doing these on the Tuesday night I was over it. She still adored them, just as all little girls and daughters will, but I would love to find another time when I have 'spare time' to try them again.<br />

But I thought if I don't post this now I never will.<br />
<br />This is a christening and first birthday combined cake. It is two stacked mud cakes, one being dark chocolate hazelnut and the other cherry ripe mud cake. Both divine tasting, although my favourite is the hazelnut. They are covered in dark chocolate ganache and vanilla flavoured satin ice.<br />

The bear is styrofoam and everything is else is edible.<br />

So it is getting close to July and this year I have two cakes to make for my girls. Last year I only had one so you can guess our little family has expanded. Anyway, the reason I am reminiscing is my first daughter could not make her mind up last year as to what sort of cake she wanted. She changed her mind so many times I gave up in the end and did a simple cake for her.<br />

The cake was a white chocolate mud cake with orange blossom water and white chocolate ganache filling. I had originally planned to model one of the disney princesses but didn't end up doing that and used some little tinkerbell figures I had instead. The cake was decorated with white spots, and red roses. The flavours just spring to life and blend so well.<br />
<br />It is a lemon sour cream cake with lemon buttercream and lemon curd. The outside is lemon buttercream tinted a nice deep yellow colour. It looks a lot darker than it was thanks to the black background I used for photographing. Might try white next time.<br />

I was asked to make it a buttercream coating on the outside and decided to add some fondant discs on the bottom for decoration. <br />

This is for a lady having twins hence two little pairs of gumpaste sneakers. This is a banana cake with cheesecake flavoured buttercream and RTR topping. As I was lucky enough to taste this cake, I can say it is the yummiest banana cake.<br />

I have babies on the brain this week but I have left the photos on my other computer. So first i will go back to a birthday cake I did for a friends partner. i took inspiration from Faye Cahill cake designs in Dulwich Hill, Sydney. She makes beautiful looking cakes.<br />
